(Serves 4)
2 8-ounce cans pineapple slices in pineapple juice
1 tablespoon all purpose flour
1/2 teaspoon salt
2 Turkey Tenderloins, cut in half
1 tablespoon salad oil
1 tablespoon honey
1 tablespoon teriyaki sauce
2 teaspoons dried chopped chives
1/4 teaspoon pepper
fresh chives for garnish
Drain pineapple slices reserving 1/4 cup juice to use later.
Cut pineapple slices into quarters; set pineapple and juice aside.
Mix the flour and salt in a bowl, then use mixture coat turkey tenderloins on a sheet of waxed paper.
Heat the oil in 10-inch skillet over medium heat (just hot enough to lightly fry the turkey.
Cook the turkey until golden brown and fork-tender, turning once about halfway through.
Remove turkey tenderloins to a warm platter and keep warm.
Stir the honey, teriyaki sauce, dried chives, pepper and remaining pineapple juice into skillet drippings. Heat the mixture to a boil for no more than 30 seconds then let cool to a warm heat.
Add pineapple and heat thoroughly. Pour sauce over turkey; garnish with fresh chives.
